I love to cook and I love to eat so it really comes as no surprise that over the years, I've managed to put on a few extra pounds....well, maybe more than a few...but we won't get into that. I just started using the Weight Watchers Points Plus Program so I've been searching for some great recipes.

The Best Chicken Salad Sandwich
3 1/2 cups roasted chicken breast, chopped
1/2 cup of diced celery
1/4 cup of red onion, diced (optional)
1/2 cup of dried cranberries
1/2 cup of fresh squeezed orange juice
1/2 cup of shaved almonds
1/2 cup of light mayonnaise
salt and pepper to taste
Makes 8 sandwiches.
For each sandwich, you will need a couple of leaves of Romaine lettuce, 2 slices of tomatoes and 2 slice of Nature's Own light white or light wheat bread.
Points Plus per sandwich: 8
Points Plus Without bread: 6
